Apple and Berry Crumble

Apple and berry crumble is comfort food at it's finest, we don't eat a huge amount of desserts as a family as I prefer fruit based and my partner prefers chocolate but this is one that we can all agree on - especially with a large scoop of vanilla ice cream on top!

You can use any type of apple for this recipe, if you are using a sweeter eating apple, just reduce the amount of sugar that you add to the fruit.

Ingredients

  1. Butter - 100 grams
  2. Cinnamon - 1 1/2 tsp
  3. Light Brown Sugar - 80 grams
  4. Plain Flour - 150 grams
  5. Rolled Oats - 30 grams
  6. Frozen Fruit - 400 grams
  7. Vanilla Ice Cream - 200 ml
  8. Granny Smith Apples - 5

Method

  1. Preheat the oven to 200C/400F/Gas Mark 6. Peel the apples, core and slice thinly.
  2. In a mixing bowl, add the plain flour and cold butter (cut into cubes) then gently rub between your fingertips until the flour and butter are incorporated and have the appearance of breadcrumbs. Stir in the oats and half of the sugar.
  3. Add the sliced apples to a baking dish along with the frozen berries, then sprinkle the remaining sugar over the top along with the cinnamon. Stir gently to combine and level the mix in the dish with the back of a spoon.
  4. Pour the crumble mixture over the top so that it completely covers the fruit and press down lightly.
  5. Bake in the oven until the fruit is tender (test with a skewer) and the topping is golden brown. Serve with a scoop of vanilla ice cream, custard or plain cream.
